These mix and match brunch waffles are the perfect recipe for a lazy weekend. Serve the toppings in bowls and the waffles in a pile and let everyone build their own

Ingredients

  • 250g plain flour
  • 1 tsp baking powder
  • 25g golden caster sugar
  • 2 eggs, beaten
  • 475ml whole milk
  • 2 tbsp groundnut oil, plus extra for the waffle iron

TOPPINGS

  • dry-cured streaky bacon rashers, grilled until crisp
  • fried eggs
  • avocado slices
  • chopped chives
  • sliced bananas
  • maple syrup
  • chocolate sauce
  • double cream, softly whipped with 1-2 tbsp of icing sugar
  • toasted pecans

Method

  • STEP 1

    Put all the dry ingredients into a bowl with ½ tsp salt. Mix the eggs, milk and oil in a jug. Gradually mix the wet into the dry ingredients to make a batter.

  • STEP 2

    Brush a waffle iron lightly with oil (or use spray oil if you have it). Pour the batter into the waffle iron and cook for 4-5 minutes until golden and cooked through. Repeat with the remaining batter. Let everyone choose their own toppings.
