Ingredients

  • 3 unwaxed lemons, (use the best quality you can find)
  • 500ml vodka
  • 350g sugar

Method

  • STEP 1

    Pare the zest from the lemons and drop into a glass jar. Pour over the vodka and mix. Seal the jar and leave to infuse for a week in a cool, dark place.

  • STEP 2

    Tip the sugar and 350ml of water into a pan and heat, stirring until the sugar has dissolved. Mix the sugar syrup into the infused vodka. Leave to infuse for another week, shaking every now and then. Pour into sterilised flip-top bottles and seal. Keep at room temperature until you want to drink it (limoncello will keep indefinitely).
